Hummingbird Cake

Gluten-Free, Dairy Free, Soy Free, Nut Free

1 1/2 C. Rice Flour
1/2 C. Tapioca Starch
1/2 C. Potato Starch
1 tsp. Xantham Gum
1 tsp. each Salt & Cinnamon
2 C. Sugar
1 1/2 Canola Oil
1 1/2 tsp. GF vanilla
3 Eggs, beaten
8 oz. can crushed pineapple w/ liquid
6 bananas, mashed
1 1/2 C. chopped pecans (optional for nut free)

Preheat oven to 350 degrees. Grease a tube pan with canola oil. "Flour" pan with sugar. Do not use flour! In a large bowl, combine flour, starches, xantham gum, salt, cinnamon and sugar. In a medium bowl, combine all "wet" ingredients including bananas and pineapple. Pour "wet" ingredients into flour ingredients and stir until all ingredients are blended. Add nuts if you prefer. Pour into a tube pan and bake for 1 hour and 10 minutes. Take out and cool for 15 minutes . Place plate on top of pan and flip over quickly. Cake will come out with ease with beautiful sugary gloss! No need for any frosting as this cake is delicious as is! Let cool and cut as you wish! (If you can wait that long)
*If you are not on a gluten free diet, you can use regular flour and omit the rice flour, tapioca starch, potato starch and xatham gum.

Frogmore Stew

Gluten-Free, Dairy Free, Soy Free, Egg Free **

2 Medium Onions, halved
4 Garlic cloves, smashed or 4 tsp. minced garlic
1/2 C. Old Bay seasoning
1 Lemon, halved
2 Pounds Red Potatoes, cut into 1'x1'
2 Pounds Sausage of your choice cut into 16 pieces
8 Ears Corn, broken into two
2 Pounds Shrimp, peeled and cleaned

Pour 3 quarts of water into a large heavy duty roasting pan or deep stew pot and bring to boil. Add onions, garlic, seafood seasoning. Squeeze lemon juice into stock, then toss halves into pot. Bring to boil. Add potatoes and sausage, return to boil. Cover pan. Reduce heat and simmer cooking until potatoes are just tender. About 15 minutes. Add corn. Cook 5 minutes. Turn off heat and add shrimp; mix real well getting shrimp to the bottom. Let sit 2 minutes. Serve!
You can serve in the original pot or pan or place on a platter with extra lemon slices.
Takes about 40 minutes total time and serves approx. 6 adults.
**Check ingredients of sausage. Some contain dairy and soy.

I am freezing! I am always cold! My husband is always warm and loves the air conditioner on nice and cool. I could honestly open the windows all summer long and be very happy. Brrrrrrrrrrrrr.
Having a good day today except I think I am beginning to understand why I have not been feeling my best lately. On top of having Celiac which means no wheat, rye or barley or anything made with those grains, I really believe I am having problems with..............are you ready.............dairy, coffee, spicy foods! ahhhhhhhhhhh So, I guess I'll just eat crab legs all day! ha!
I am going to see what happens by praying and avoiding those foods. I have to get my stomach healed. It just isn't right. My legs have been hurting so bad at night lately and I really believe it is connected to something I am eating b/c of my stomach not being right either. Food can do so much to us if we just listen to our bodies.
Anyway, we didn't get a lot of wind but we got a nice soaking from the tropical storm Hanna. Our grass is nice and green again. We had a nice family day. Normally we would have a football game in the morning but it was canceled.
Well, sending a yummy recipe along the way. My mom sent this to me from Florida! It was delicious tonight for dinner. And we have leftovers for tomorrow after church. That is always nice!

You never know!

Today was a good day. I got a lot done around the house. The kids had a good day in school. I picked up the kids from school including the Swearingen kids and we took them home. We decided to go by Sonic to get some drinks, since it is 1/2 off between 2 & 4! So we went by there and everyone got a drink and for some reason I didn't feel like it - normally I get the Cherry Limeade!!! Anyway, you just never know with allergy kids what is going to happen. We get home and all three of them start getting severe stomach aches and all three end up in the bathroom. I will not give you the lovely details but some of the cleaning involved MOM! They didn't all have the same drink! And Brandon had the Blue Coconut before and it never affected him like this! No they did not have the same lunch or breakfast! I am not sure what happened! So, if you suffer food allergies or have kids that do, you can relate.
So, the older two are home from football practice and are bored! I love that. Bored when you don't feel well. Our rule is that if you are sick you do not play on the Xbox or Wii or outside. Part of the deal. If you feel that good you are good enough to go to practice or school or whatever you missed.
Well, if anyone has any insight, I'd love to hear it. Did they change the syrup? Oh well. My bathrooms are clean now!

Mango, Shrimp, & Coconut Spring Rolls

Gluten-Free, Soy-Free, Dairy Free

1 Tbsp each sesame oil, lime juice, sweetened coconut
1 tsp fresh ginger or 1/2 tsp ground ginger
10 fresh springs cilantro, minced
1 Tbsp minced garlic clove
salt to taste
1/2 C. pea pods
1 C. baby shrimp
1 mango, seeded, peeled, and chopped
1 can baby corn, cut into chunks
8 rice spring roll wrappers

In a large mixing bowl, add all ingredients. Stir well and set aside.

Hold 1 wrap under running warm tap water making sure you get the front and back. Hold under for about 30 seconds until it starts to soften. Then place flat on a cutting board. Spoon filling across middle about 2 inches thick then wrap over bottom up and fold over. Repeat.

Howdy!

Well, I'm back. Had a busy couple of days. We watched our friends 3 children so we were a little busier than normal. The kids had a wonderful time. They played so hard. We are like family so it wasn't a big deal.
Had our first football game on Saturday. We won!!!! Josh and Matt are both on the Staunton Junior team. They really enjoy it.
We have a Bible Institute that offers a four year Bible course so I am taking it. I started last semester. It is such a blessing. I love it! I am learning so much.
I found a really good recipe that I am going to share. I will post it after this. It looks so good and can cater to most people!

Homemade mayo!

Gluten-Free, Dairy Free, Soy Free

Makes 2 Cups.
2 eggs yolks
1 tsp. dry mustard
1 tsp. salt
1 1/2 Cups COLD canola oil
2 tsp. lemon juice
sugar

In food processor or blender, whirl together yolks, salt and lemon juice. Continue while slowly adding a thin stream of your cold oil until you reach the consistency you wish. Stop processor or blender and taste. Add sugar if you desire 1 tsp. at a time and whirl until blended.
Note: Oil must be cold for recipe to work! Put oil in fridge for 2-4 hours to chill.
Things you may want to do to spice up your life w/ new mayo:
add 3 Tbsp of prepared horseradish to 1 C. mayo for roast beef!
add 3 Tbsp of whipped cranberry jelly & 1 Tbsp grated orange peel to 1 C. mayo for turkey sand.
add 2 Tbsp wasabi paste, 1Tbsp light olive oil, salt & pepper to 1 C. mayo, whisk well and serve with crab cakes or grilled fish.
add 1/2 C. chopped herb of your choice to 1 C. mayo and whisk well.
